It is made up of two main parts, saponifable and unsaponifable. Saponifable is made up of triglycerides and makes up about 98-99% of the Oil. Unsaponifable is composed of antioxidants and vitamins and makes up about 1 – 2 % of the oil.
Unsaponifable makes part of the alcohol component of the oil giving the oil its distinctive smell. It contains polyphenols which act as antioxidants, anti Inflammatory, anti allergenic anti bacterial and anti viral agents. It seems that the components of olive oil are useful in preventing chronic degenerative diseases, circulatory problems and also cancer. Olive oil contains substances such as lipo soluble vitamins, A, D and E, Carotenoid pigments and chlorophylls, which all function as antioxidants. Medical research recommends the consumption of olive oil in order to prevent the signs of aging, and for the protection of the body from cardio circulatory diseases. The combination of saturated fatty acids, mono saturated fats, and poly saturated fats is what gives olive oil micro constituents such as tocopherols and poliphenols which are known to aid and ease digestion, slow the aging process at a cellular level, prevent gallstones, encourage brain connectivity, prevent thrombotic problems, and decrease cholesterol levels.
