EXTRA VIRGIN OLIVE OIL

No product is more traditionally, typically, or essentially Mediterranean than olive oil. Cultivation of the olive tree in Apulia dates back to the Neolithic age (7000-3000 A.C) its cultivation has involved many centuries, people and cultures.

Olive oil is well known for its health benefits, it has been used as a seasoning and cooking aid for centuries for its ‘organoleptic’ qualities.
Olive oil is good for us in many ways. It is made up of two main parts, saponifable which are triglycerides making up about 98-99% and the other unsaponifable which makes up about 1-2 % of the oil. The unsaponifable part makes up the alcohol part which gives olive oil its distinctive smell, its polyphenols and anti-oxidant components polyphenols act as antioxidants, anti inflammatory, anti allergenic, anti bacterial, and anti viral agents.
It seems that the components of olive oil are useful in preventing chronic-degenerative diseases, circulatory problems, as well as cancer. Olive oil also contains substances such as lipo soluble vitamins A, D and E carotenoid pigments and chlorophylls. Which all function as antioxidants. Medical research recommends the consumption of olive oil to be used in order to prevent the signs of ageing, and in protection of the body from cardio-circulatory diseases. The combination of saturated fatty acids, mono saturated fats, and poly saturated fats is what gives olive oilmicro-constituents such as tocopherols and poliphenols which aid in easing digestion, slow the aging process at a cellular level, prevent gallstones, encourage brain connectivity, prevent thrombotic problems, and decrease cholesterol.
